1st October is World Vegetarian Day. Whether you’re a vegetarian or not, this is the perfect time enjoy the many possibilities vegetables can offer. Going vegetarian or if you’re trying to eat less eat has many benefits for you and the planet.

A veggie diet of fruit and vegetables is full of antioxidants that can help to improve the health of your heart, reduce cholesterol, get your skin glowing, lower diabetes, and increase energy levels. In addition, embracing a vegetarian diet / less meat diet, can have a positive impact on our environment. By making the switch, Stylist magazine reported that a veggie diet results in 2.5 times less carbon emission. And, after being vegetarian for a year, the emissions you’ll save would be the equivalent of taking a small car off the road for six months. Additionally, as plant protein requires less water than meat to be produced, going veggie also means you’ll be saving water too. And, last but by no means least a vegetarian diet can save the slaughter of over 2 million animals – now that’s food for thought.

Recipe: Spiced Chickpea, Carrot and Coriander Burgers

From blender to table in 15 minutes and all made with fresh tasty ingredients. Cook from fresh or freeze for another day. These burgers are suitable for a vegetarian, vegan or dairy free diet.


Ingredients

  • 2 x 400g tins chickpeas, drained and rinsed
  • 1 medium carrot, cut into chunks
  • 2 spring onions
  • 1 clove garlic
  • 2 tbsp peanut butter
  • juice of half a lemon
  • a handful fresh coriander
  • 2 tsp harissa powder
  • 2 tsp ground cumin
  • 45g/½ cup porridge oats
  • 2 tbsp flax seeds
  • 1tbsp Nutiva Coconut Oil
  • A good grinding of black pepper


Instructions

1. Drain and rinse the chickpeas, top and tail the spring onions and peel the carrot and chop into chunks.

2. Pop all the ingredients into a blender or food processor and blend until fairly smooth.

3. Shape into 6 burgers.

4. Fry the burgers until crisp, using any of the Nutiva Coconut Oil products, then serve on toasted burger buns with your favourite toppings.

5. Enjoy!
